Sweet & Tangy Beef Roast
We love classic pot roasts, but for the days when you feel like mixing it up, try this flavor-packed roast recipe instead.
Sweet & Tangy Beef Roast
For the Roast:
- 1 chuck roast - 3 to 4 pounds (or any of our other roasts will work)
- Salt & pepper
- 3-4 cloves minced garlic (or garlic powder)
For the Sauce:
- 1 cup tomato paste (thick tomato sauce also works)
- ½ cup broth of choice
- 3 tablespoons honey or maple syrup
- 1 tablespoon mustard
- 1 tablespoon Worcestershire sauce
To Thicken the Sauce:
- 3 tablespoons arrowroot powder (or cornstarch)
- ¼ cup water
Instructions:
Add several tablespoons of cooking oil to a pre-heated skillet over med-high heat and sear the roast on all sides until golden brown.
Season the roast on both sides with salt & pepper and then place it in a slow cooker with the minced garlic on top.
Whisk together all of the sauce ingredients and pour over the roast.
Cook on low for 8-9 hours, or until fork tender.
If you’d like a thicker, gravy-like sauce, whisk together the arrowroot powder and water, then pour into the warm sauce and stir until smooth. Turn your crockpot on high for 4-5 minutes until the sauce thickens.
Enjoy your roast alongside rice or potatoes, or serve on buns as shredded beef sandwiches.
