This steak originates from the rear of the animal right under the tenderloin strip. A naturally lean steak, full of bold, beefy flavor. It's a great, simple grilling steak, but also great paired with marinades and sauces. Serve it up rare to medium-rare for perfect balance of flavor and tenderness. These steaks are cut 1-1.5” thick.
